Due to hardness of heart (see Matthew 19). Furthermore, we have Jesus' teaching in Matthew 19, which is instructive concerning the plan at creation. God created Adam and then gave him one woman to suit his need for companionship. God didn't give Adam multiple wives or a harem. He gave him Eve.
