I shake my head in amazement whenever some says that he is drinking NEW WINE that is NOT FERMENTED.
Whenever the fruit skin is broken or crushed, the yeast from the fruit skin immediately starts eating the sugar of the fruit juice and the fermentation process is started. The yeast produces CO2 and alcohol as it eats the sugar. That is why Jesus used the analogy of never putting new wine into old skins because the yeast is producing CO2 and alcohol. Sometimes even fermentation occurs when the skin of fruit is not broken and left out in the sun. Fermentation still occurs when the juice is refrigerated but at a slower rate of fermentation. Fermentation is completely inactive at freezing point but it will resume when it the temperature goes above freezing. In ancient times, grape juice would be made into grape syrup, even this would be exposed to fermentation from yeast in air. The yeast will die off as the most of the sugar is eaten and the alcohol acts as a preservative.
There is a question of fruit of vine in Matthew. Is it cucumbers, melons, or is it grapes?
