This is the 4th encounter between Jesus and the Pharisees as described in the book of Mark in which we see the principle of mercy. If the Pharisees understood that God's intention is always mercy they would not be accusing the disciples of breaking the law. They saw themselves as the authority over the Sabbath...of what could or could not be done on that day. But the Pharisees knew nothing of mercy...all they knew was the law and they tried to catch Jesus breaking the law. All throughout the law God always had a place for mercy. Law condemns whereas mercy redeems. Jesus declares to them that He has authority over the Sabbath...not them. He rebukes and angers the Pharisees yet again. While Christians do not observe the Sabbath, God has set aside the first day of the week (Sunday) when our focus is to be on Him and Him alone.
